Breakfast can be the hardest for some to replace as everyone is after a quick option as they head out the door.
This leads to consuming super filled cereals and toast but here is a better idea this recipe is part of our 28 days and 6-week challenge program
Almond Flour Pancakes
- 1 cup Almond Flour
- 20g Coconut 180 Protein Powder (half a serving)
- 1 Egg
- 1.5 tsp. Coconut Oil
- 2 tbsps. Unsweetened Almond Milk
- 1 tsp. Raw Honey
- 1 tsp. Vanilla Essence
- 1/2 cup Blueberries (garnish)
- 1/2 -1 Banana mashed (if post-workout, otherwise omit)
Directions: Whisk almond flour, almond milk, eggs, vanilla essence, and honey together in a bowl until batter is smooth, add banana if using.
Heat oil in a pan over medium heat; drop batter by large spoonful onto the pan, and cook until
bubbles form and the edges are dry (3 to 5 minutes.)
Flip, and cook until browned on the other side, 3 to 5 minutes. Garnish with blueberries and some coconut yogurt and enjoy
